Because it's the technical, scientific term used to describe beings who are biologically male and female, though this does not refer to the social construct of gender, which has a whole spectrum of definitions. Applying the term "male" and "female" to biology is the same as applying the term "lung" or "liver" to other organs. We do it because it's easier to understand a universal definition, especially in areas like science where it's important for everyone to be on the same page during say, an operation. If a doctor decided to rename the lung an "ung", just because he damn well felt like it, you can bet something could go wrong if he's trying to communicate with nurses or whoever else, while dealing with someone's health.
That is why I refer to them as male and female. But you did not answer my question.
